Today, we are making sweet potato shepherd’s pie boats. My family and I love shepherd’s pie! It is probably my favourite meal. We make it all the time and we always make it the same way. A layer of meat, corn, mashed sweet potatoes, and finally some cheese.
We started using sweet potatoes about 10 years ago and have never gone back. I don’t think I would ever want regular potatoes in my shepherd’s pie again. It’s so much smoother and creamier than regular potatoes! The sweet potatoes also give it more flavour.
The other day, we wanted to use the sweet potatoes we had in the house. Of course, we immediately thought of the shepherd’s pie, but we decided to change it up slightly. It turned out so amazing! So I thought I would share the recipe! I think you’ll like it just as much as we did.
Sweet Potato Shepherd’s Pie Boats
Takes roughly 45 minutes. Serves 6 (or 4 if you want a larger portion).
Ingredients
- 3 Large Sweet Potatoes
- 1 1/2 Cups of Corn
- 1 Pound (500g) of Beef
- 3/4 Cup of Water
- 1 Onion, Finely Chopped (Optional)
- 3 Tbs of Sour Cream (You can add more or less if you think it needs it.)
- 1 Tbs of Butter
- 1 Packet of Club House Shepherd’s Pie Mix
- 1-2 Cups of Grated Cheese (Depending on how cheesy you like it.)
Instructions
- Put the potatoes in the microwave for increments of 5 minutes until they are squishy and you have no resistance when you poke them with a fork. (Typically takes 15-20 minutes depending on the size of the potato.)
- Brown the meat while you are waiting for the potatoes. Add the onion while cooking the meat (not everyone in my family likes onions, so we don’t add them in ours). Empty out the grease.
- Mix the seasoning and water together.
- Add the seasoning to the meat. Reduce the heat and let it boil for 5 minutes. Mix it every once in a while to make sure all the meat gets an equal amount of sauce.
- Once you have your cooked potatoes, cut them in half and scoop out the potatoes into a bowl. Leave just enough of the potato in the skins to coat the sides. (It helps to hold the shape of the skins.)
- Heat the oven 400 F (or 200 C).
- Cook the corn in the microwave. (If you prefer, you can also cook the corn in the pan with the meat. This is just how we do it.)
- Take a masher or a fork and mash the potatoes until the potatoes look creamy. Add a dollop of sour cream and butter.
- Mix the potatoes, meat, and corn together.
- Put the mix into the sweet potato skins on a baking sheet.
- Place them into the oven for 15 minutes.
- Put cheese on top and slide it back into the oven until it melts.
- Serve and enjoy!
